What are Moringa, Date and Peanut Bars?
Moringa, Date and Peanut Bars are firm-set no-bake bars made by processing oats, peanut butter, dates and other ingredients into a thick mixture, then pressing it into a lined tin and chilling until firm.
This version uses Heritage Organic Moringa Powder alongside chia seeds, ground flaxseed, desiccated coconut and Ceylon cinnamon. The bars develop a natural muted green colour from the moringa powder while retaining visible oat and seed texture.
Ingredients
- 90 g rolled oats
- 125 g natural peanut butter
- 60 g soft Medjool dates, pitted
- 50 g Heritage Organic Extra Virgin Coconut Oil, melted
- 30–45 g date syrup or honey
- 20 g Heritage Organic Desiccated Coconut
- 20 g chia seeds
- 10 g ground flaxseed
- 5–7 g Heritage Organic Moringa Powder
- ½ tsp Heritage Organic Ceylon Cinnamon Powder
- 1 tsp vanilla extract
- 1–2 tbsp water, if required
- Pinch of salt
How to make Moringa, Date and Peanut Bars
1. Prepare the tin
Line a small loaf tin or rectangular container with baking paper.
2. Pulse the oats
Add the rolled oats to a food processor and pulse until they are coarsely ground.
3. Add the main ingredients
Add the natural peanut butter, pitted Medjool dates, melted Heritage Organic Extra Virgin Coconut Oil, date syrup or honey, Heritage Organic Moringa Powder, Heritage Organic Ceylon Cinnamon Powder, vanilla extract and salt.
4. Process the mixture
Process until a thick mixture forms.
5. Adjust if required
If the mixture is too dry, add water one teaspoon at a time until the mixture comes together.
6. Add the remaining ingredients
Add the chia seeds, ground flaxseed and Heritage Organic Desiccated Coconut.
7. Pulse briefly
Pulse only a few times so the chia seeds, flaxseed and desiccated coconut are distributed evenly through the mixture.
8. Press into the tin
Transfer the mixture to the prepared tin and press down very firmly.
9. Chill
Refrigerate for at least 1 hour.
10. Cut into bars
Once firm, remove from the tin and cut into 8–10 bars.
How to serve them
Serve the bars chilled. Their compact format makes them easy to portion for an at-home snack or to keep prepared in the refrigerator.
For the cleanest presentation, cut the chilled slab into evenly sized rectangular bars and serve on a simple plate or board.
Recipe tips
Pulse the oats only until coarse. The recipe calls for coarsely ground oats rather than a fine oat flour.
Use soft dates. Soft Medjool dates are easier to process into the thick mixture specified in the recipe.
Add water gradually. If the mixture is dry, add water one teaspoon at a time rather than adding the full optional quantity immediately.
Do not over-process the final additions. Once the chia seeds, ground flaxseed and desiccated coconut are added, pulse only a few times so they are distributed without losing their texture.
Press firmly. Compacting the mixture well helps create the firm-set bar shape after chilling.
Allow the full chilling time. Refrigerate for at least 1 hour before cutting.
