Method

  1. Preheat the oven to 180°C.
  2. Mix the soy milk with the apple cider vinegar and set aside.
  3. In a large bowl, whisk together the plain flour, Heritage Organic Coconut Sugar, baking powder, baking soda and cornflour.
  4. Mash the bananas until smooth. Whisk in the tahini, vegetable oil, vanilla and prepared soy-milk mixture.
  5. Add the wet mixture to the dry ingredients and fold gently until just combined. Avoid overmixing.
  6. Divide the batter between muffin liners. Add banana slices or a tahini drizzle if desired.
  7. Bake for 23–25 minutes, until the tops are golden and a toothpick inserted into the centre comes out clean with a moist crumb.
  8. Cool briefly in the muffin tray, then transfer to a wire rack.
